Vegan Spinach Artichoke Pizza

Pizza is always a good idea. This recipe is so rich and decadent you won’t even miss the cheese – I promise.

What you’ll need:

1 Pre-Made Pizza Crust – if you want to make your own go for it!

1/2 Red Onion

3 Cups Spinach

1 Artichoke

Sauce:

5 Artichoke Hearts

2 Cloves of Garlic

3 TBSP Olive Oil

1 TSP Water

To make the sauce, combine all ingredients in high-speed blender until smooth, adding more water teaspoon by teaspoon to get the right consistency. If you’re using artichokes in water instead of brine, you may also want to add salt to taste.

Spread the sauce generously over the crust and let sit.

Heat 1 tablespoon of water in a saute pan. Once hot, add spinach and onions and saute until the onions are turning translucent and the spinach is welted.

Top the sauced pizza with spinach and onion mixture and last artichoke heart.

Bake the pizza according to the instructions on the pre-made crust package, or on 400 degrees until edges turn brown.
